Blueberry Crepes for One

I’m not sure how anyone can honestly believe this is some kind of breakfast, it’s obviously 90% dessert. Not that I’m against it or anything, hail dessert for breakfast! This recipe is perfect for a single serving, helps keep you from eating too many!

Other filling ideas for crepes are strawberries, Nutella, or bananas. Frozen berries are great for cooking up a quick topping. Go with what you have on hand—fill them with fresh fruits and sprinkle with powdered sugar to garnish.

Blueberry Crepes for One

Servings 4 crepes

Ingredients

CREPES

  • 1 egg
  • ½ cup flour
  • 1 cup milk
  • ½ tbsp sugar
  • tsp salt
  • ¼ tsp vanilla extract
  • 1 tbsp butter melted
  • Butter for pan
  • Whipped cream for topping

BLUEBERRY SAUCE

  • ½ cup fresh blueberries
  • ¼ cup water
  • 1 tbsp lemon juice
  • 1 tbsp sugar

Instructions

BLUEBERRY SAUCE

  • In a small saucepan, cook all ingredients on medium low heat until bubbling, soft and thickened. About 6 to 8 minutes.
  • Set aside until ready to use. Chill in refrigerator if making ahead of time.

CREPES

  • Mix all ingredients well using a whisk or a blender for smoother crepes.
  • Pour batter into a measuring cup or other container with a spout.
  • Heat and lightly butter a nonstick pan on medium low heat.
  • Each crepe should be about ¼ cup of batter. Lift and swirl the pan to spread the crepe out after pouring in the center.
  • Cook a minute on each side.
  • Serve with blueberry sauce and whipped cream.
