Cakey Lemon Cookies

These soft, cakey lemon cookies are super delicious and pretty straightforward to make. I added a little extra zing with some lemon extract. You could omit and just use a little more fresh lemon, but it really does take it next level. There’s no mistaking it’s lemon flavored!

So. Good.

These look like a cookie but they eat like a delicious cake. To make sure they have a nice round shape, don’t smoosh them down before baking. Keep them in a ball on the cookie sheet. They will fall a little anyway.

Make sure you let the cookies cool so the lemon icing will stay on the cookies. I know, it’s tough to not eat them right away! If it helps, they taste better after sitting for a bit. You can garnish with some zest if you like.

Cakey Lemon Cookies

Ingredients

  • 2 sticks butter
  • 2 cups flower
  • ¾ cup sugar
  • 1 egg
  • ½ tbsp lemon zest
  • 1 ½ tbsp lemon juice
  • ¼ tsp salt
  • 1 tsp Vanilla extract
  • ½ tsp lemon extract
  • ½ tsp baking powder
  • ¼ cup milk

GLAZE

  • ½ cup confectioners sugar
  • 1 tbsp lemon juice
  • 1 tbsp Butter softened
  • 1 tsp lemon zest

Instructions

  • Preheat oven to 350F.
  • Cream butter and sugar in mixer till light and airy.
  • Add the rest of the liquid ingredients and egg.
  • Slowly mix in flour, baking powder, zest, and salt.
  • Dough should be wet and sticky.
  • Line baking sheet with parchment.
  • Scoop 1 tbsp balls of dough and roll into a smooth sphere. Place on sheet with 2 inches apart.
  • Bake 12 -15 minutes. Till bottom starts to color.

GLAZE

  • Mix all ingredients together till smooth.
  • Cool cookies completely before frosting.
