Delicious and rich mint ice cream with chocolate chips. This ice cream is as luxurious as custard and you don’t need a machine to make it. Just some patience….
I’ve had an ice cream machine saved in my online shopping cart for over 3 years, but I just can’t bring myself to buy it just yet. So I searched high and low for a way to make it without an infernal device. Most recipes went the condensed milk route, which is fine, but I don’t really think that’s quality ice cream *turns up nose*.
There were a few stand out recipes that suggested stirring every 30 minutes. So I went with that method and used a pretty classic recipe that included some egg yolks to make it decadent.
It turned out way better than I thought it would! 10 outta 10 will make again.
RECIPE NOTES
- When heating the milk and cream, DO NOT burn it. It should be a gentle bubble.
- You can use a chocolate bar or any other form of chocolate you have at home. I always have chips so I used those. Make sure to chop it up, big frozen chunks of chocolate will break your teeth!
- Go easy on the peppermint flavor. Start with 1/4 tsp then taste. Add more if needed.
So if you are gonna be home all day, give it a try.. Just remember to set an alarm every 30 minutes and stir!
Mint Chocolate Chip Ice Cream No Machine
Ingredients
- 1 cup heavy whipping cream
- 1 cup milk
- ⅓ cup sugar
- 3 egg yolks
- ½ tsp vanilla extract
- ¼ – ½ tsp peppermint extract
- ½ cup milk or semi sweet chocolate chips
- 1 – 3 drops green food coloring
Instructions
- In a medium saucepan, mix milk, cream, and sugar. Heat on low.
- Whisk egg yolks in a bowl.
- When milk and cream mixture bubbles, remove from heat and slowly pour ⅓ of mixture into egg yolks while whisking to temper. Add yolk liquid back into the saucepan, constantly whisking. Turn heat back on to low.
- Let bubble on low for 1-2 minutes then remove from heat. Stir in flavor extracts and food coloring if using.
- Pour into a shallow container through a sieve. Cool in the fridge for 20 minutes, then transfer to the freezer for 30 minutes.
- Cut chocolate into smaller pieces. Can use chocolate bar in place of chips. Just make sure to cut into small bits or chips.
- After 30 minutes in the freezer, take out and stir in chocolate chips. Freeze again for 30 minutes and stir to break up and icy parts. Repeat for a total of 4 – 5 times. Until the mixture resembles soft serve.
- Transfer to a better container and keep in the freezer. When serving let sit for 5 minutes to make it easier to serve.
