Peppermint Christmas Tree Meringue Cookies

These crunchy little meringues are a perfect addition to your Christmas gingerbread house! Just a touch of peppermint gives it that holiday zing. A small amount of peppermint goes a long way!

The trees are simple and easy to make. Just use a star piping tip and pipe 3 on top of each other with each one getting slightly smaller towards the top. You could experiment with styles by piping a swirl tree instead.

Remember to let the meringues slowly cool in the oven! This helps prevent cracks.

Peppermint Meringues

Ingredients

  • 4 egg whites
  • 1 cup sugar
  • Pinch of salt
  • 1 tsp cornstarch
  • ½ tsp cream of tartar or white vinegar
  • 1 tsp vanilla
  • 1/4 tsp peppermint extract

Instructions

  • Preheat oven to 220 F.
  • Whip egg whites and cream of tartar till foamy.
  • Slowly add in sugar while still mixing on medium high.
  • Add in vanilla and peppermint.
  • Whip till stiff peaks.
  • Add meringue to icing bag with tip about ½ inch opening.
  • Pipe out desired meringue shape.
  • Bake for 90 minutes.
  • After 90 minutes turn of oven and let meringue sit in oven an hour with door cracked open.
  • Store in airtight containers, keep humidity out!
