Thai Cabbage Salad with Peanut Dressing

This crunchy and flavorful salad is a great way to make eating healthy a little more exciting. Nothing more depressing than endless boring salads when you are trying to drop some weight.

Zesty lime, salty soy sauce, nutty and sweet peanut butter make this salad stand out. Plus the texture is more interesting thanks to the crunchy cabbage. You could add other vegetables depending on what you have on hand. Red peppers, red cabbage or cucumbers also go well.

Thai Peanut Cabbage Salad

Ingredients

SALAD

  • 2 cups Cabbage shredded
  • 1 cup Carrots shredded
  • ½ cup Green onions cut on bias
  • 1 cup Broccoli florets slice in half
  • Smashed peanuts

DRESSING

  • ¼ cup smooth peanut butter
  • 3 tsp rice vinegar
  • 2 tsp lime juice
  • 2 tsp sesame oil
  • 3 tsp Soy Sauce
  • 2 tsp Brown Sugar or honey
  • Garlic powder
  • Red pepper flakes to taste
  • 1 tsp fresh ginger minced
  • Salt
  • Pepper

Instructions

  • Mix salad vegetables in a bowl.
  • Whisk together the dressing ingredients.
  • Stir dressing into salad and add peanuts.
