French Onion Soup

Pretty much my favorite soup. You don’t need to go to a restaurant to eat this comforting soup!

Oh yeah.

Adding some balsamic really makes this soup taste rich! Traditionally the soup is broiled with bread and cheese on top. For an easier alternative, you can bake some bread with cheese on top.

French Onion Soup

Servings 8

Ingredients

  • 2 48 oz containers of beef broth
  • 1 cup water
  • 1 beef bouillon cube
  • ½ cup red wine
  • 2 bay leaves
  • 1 tbsp worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp marjoram
  • 5 large cooking onions
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • Baguette
  • Mozzarella swiss and parmesan

Instructions

  • Slice onions in half and slice into strips.
  • Heat oil in large stock pot.
  • Cook onions in oil till soft and translucent. About 10 minutes on medium.
  • Add garlic to pan and cook 5 more minutes.
  • Add half the wine and let cook down and absorb for 5 minutes.
  • Pour in rest of wine and repeat. Add salt and pepper.
  • Pour in ½ cup of broth and cook down.
  • Add all broth to the pot along with water, bouillon, spices and balsamic and worcestershire.
  • Cook for 30 minutes. Taste and add more seasoning or sauce if needed.
  • Serve toasted bread slices with melted cheese on top.
