Baked Easy Toffee Candied Peanuts

All the toffee and candy flavor without any of the difficult candy making. A good quick and cheap snack.

Sometimes you want a toffee or brittle, but are feeling extra lazy. You don’t wanna deal with candy making or driving to the store to get some.

You just need to toss the peanuts with some sugar, corn syrup, and butter. Dump them onto a baking sheet and bake!

I like adding some sugar at the end after baking for texture and a little added sweet.

Toffee Candied Peanuts

Ingredients

  • 2 cups unsalted or low sodium peanuts
  • 2 tbsp corn syrup
  • 3 tbsp sugar + 2 tsp for dusting
  • 2 tbsp butter melted
  • ¼ tsp salt
  • ½ tsp vanilla

Instructions

  • Preheat the oven to 300 degrees F.
  • Mix up corn syrup, butter, 3 tbsp sugar and salt in a bowl.
  • Stir in peanuts.
  • Line a baking sheet with parchment paper.
  • Spread out peanuts on sheet and bake for 22 – 26 minutes. Stir once halfway through.
  • Let cool for 10 minutes and dust with remaining sugar. Mix up nuts and store in an airtight container.
