Boiled Artichoke and Lemon Butter Sauce

One of the most delicious foods out there and much easier to prepare than you would think. Artichokes are among my all time favorite foods. If you put a steak and an artichoke in front of me, I would pick the artichoke EVERY TIME. It’s a super meaty vegetable.

It goes so well with lemon butter, like they were made for each other. I love getting down to the heart, scraping off the furry choke bits and soaking the heart in butter. So good!!

Prep Work: Showing off those cuts.

If you have never eaten one before it can seem daunting, but it’s pretty straightforward. Scrape the “meat” off the leaves with your teeth, DO NOT eat the leaves. Then you spoon off the hairy part covering the heart, it comes off pretty easily.

Boiled Artichokes with Lemon Butter Dipping Sauce

Ingredients

  • 2 artichokes
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 lemon
  • 2 tbsp butter

Instructions

  • Cut the stem off the artichoke right at the base.
  • Cut the top off the artichoke, about ¾ of an inch off the top. Snipe the remaining leaf points off with a kitchen shears.
  • Rinse well, gently opening the leaves a bit.
  • Bring a stock pot ¾ full of water to a boil. Season with salt and garlic powder. Add half a lemon in slices to the water.
  • Turn water to a simmer and add artichokes. Cover.
  • Cook 30 minutes or until outer leaves can be easily pulled off.
  • Microwave butter for 30 seconds or till melted.
  • Add juice of half a lemon to butter.
  • Serve.
