Crispy meringues that can be filled with anything from lemon curd to pastry cream. Top with some fresh berries and you gotsa classy dessert.
Even though this dessert seems kind of old school, it’s really popular with the kiddos! All my nieces were absolutely taken with these crunchy little nests. Plus they can pick their fillings and they look super cute!
These can be made way ahead of time. Like a week! As long as they stay away from any moisture. So seal them up good and keep out of the fridge. Since this recipe calls for only egg whites you can use the leftover yolks to make a curd or custard.
Meringue Nests
Ingredients
- 4 egg whites
- 1 cup sugar
- Pinch of salt
- 1 tsp cornstarch
- ½ tsp cream of tartar
- 1 tsp vanilla
Instructions
- Preheat oven to 220 F.
- Whip egg whites and cream of tartar till foamy.
- Slowly add in sugar while still mixing on medium high.
- Whip till stiff peaks.
- Add meringue to icing bag with tip about ½ inch opening.
- Pipe out discs and then build up a wall to make the little bowl or nest.
- Bake for 90 minutes.
- After 90 minutes turn of oven and let meringue sit in oven an hour with door cracked open.
- Store in airtight containers, keep humidity out!
- Serve with whipped cream, custard, a fruit curd or fresh fruits.
