Small batch cooking is all the rage in my house. For all one of me! Because of social distancing, we can’t share all of our tasty treats. So if like me you rely on the stomachs of neighbors, friends, family or coworkers to disappear your cookies…. Small batch recipes are a must. Plus it helps save on ingredients.
Sprinkle with sea salt flakes to make it extra fancy.
Small Batch Oatmeal Chocolate Chip Cookies
Servings: 12 cookies
Ingredients
- 8 tbsp butter softened
- ¼ cup brown sugar
- ¼ cup granulated sugar
- 1 egg
- ½ tsp vanilla
- ¼ tsp cinnamon
- ½ cup rolled oats
- 1/3 cup flour
- ¼ tsp salt
- ½ tsp baking soda
- 1 cup chocolate chips + some for topping
Instructions
- Preheat oven to 350 degrees F.
- Beat butter and sugar till creamy.
- Add egg, and vanilla.
- Mix together flour, baking soda, and salt. Add to butter and stir till well mixed.
- Add in chocolate chips and combine.
- Line a cookie pan with parchment.
- Shape heaping tablespoons into a ball with 3 inches apart.
- Bake 11 – 13 minutes.
Notes
Sprinkle with salt flakes for extra fancy.
