I love making vegetable rolls at home, it makes me feel fancy! Of course I’m too chicken and unqualified to make actual raw fish sushi. I could add some cooked salmon or crab though.
Vegetable sushi or maki rolls usually have ingredients like cucumber (kappa), carrots, avocado, sweet potato, tempura vegetables, lettuce, or asparagus. Really you could put anything you want in it.
Remember to toast your nori! Also, always keep your hands and utensils wet while working with sushi rice. It sticks to everything!
This is a smaller recipe than most out there. Good for 2 people or for 1 person and 2-3 meals. It’s fun to bring these to lunch the next day and would also be good for your kids lunchbox.

Sushi Rice
Ingredients
- 1 ½ cups uncooked sushi rice
- 2 cups water
- 3 tbsp rice wine vinegar
- 2 tbsp sugar
- ½ tbsp salt
Instructions
- Rinse rice well
- If using rice cooker follow rice cooker directions for sushi rice.
STOVE TOP
- Combine water and rice in pot.
- Bring water to boil, stir, turn heat down to low, and cover pot.
- Let cook 20 minutes. Turn off heat, stir rice, cover and let sit 5 minutes.
SUSHI RICE
- In a saucepan heat vinegar, sugar and salt. Cook till sugar is dissolved. Take off heat.
- In a GLASS bowl, combine cooked rice and vinegar mixture. Stir well with a wet spoon to combine.
- Make sushi right away.
