I was surprised at how good these were. I had some left over corn on the cob and decided, what the hell, I’ll try to make fritters.
They were so tasty and the sauce sealed the deal! It was a pretty good alternative breakfast, def make again.
THE SAUCE
A simple mix of sweet, creamy, and spicy. Perfect companion for the crunchy corn fritters.
- Mayonnaise
- Sriracha
- Honey
- Garlic Powder
- Lemon Juice
- Dijon Mustard
Add more or less of each ingredient, depending on your tastes. If you don’t have all the ingredients, no worries! The must haves are mayo, honey and sriracha(or any similar hot sauce), the rest is icing on the cake. You could punch it up with other spices if you wanted. Get creative with cayenne pepper, cumin, chili powder or paprika.
Corn Fritters

FRITTERS
- 1 ½ cup fresh corn
- 6 tbsp flour
- 1 tbsp corn meal
- 5 tbsp milk
- 1 egg
- ½ tsp baking soda
- ½ tsp salt
- ¼ tsp cayenne pepper
- ¼ tsp onion powder
- Oil for frying
SPICY AIOLI SAUCE
- ½ cup mayonnaise
- 1 ½ tbsp of honey
- 1-1 ½ tbsp of sriracha
- ½ tsp garlic powder
- 1 tsp lemon juice
- ½ tsp dijon mustard
Instructions
FRITTERS
- In a bowl, mix together dry ingredients.
- Add in milk, egg, and corn. Stir until combined.
- Shape 1 ½ tbsp mounds into patties.
- Heat ¼ inch of oil in a pan.
- Fry on each side for 3 minutes. Should be a golden brown.
- Drain grease on a rack over a cookie sheet or on paper towels.
SAUCE
- Combine all ingredients. Taste and add more of each ingredient as needed.
- Store in refrigerator.
