Nothing makes you feel you have your life together quite like baking a loaf of bread in the morning. Do half the work the night before so you don’t need to get up at 4:00 AM.

Eating butter and honey toast with fresh bread is a rare treat. This recipe is perfect for your everyday sandwiches and toast. The 1 loaf recipe is ideal for a small family or single person.

Overnight Bread

Starting the bread the night before is easy! The first rise happens overnight in the refrigerator, the next morning punch the dough down and shape into a greased loaf pan. Let dough rise 40 to 60 minutes before baking in the oven.

  • 1 tbsp sugar
  • 4 tbsp butter softened
  • 1 ½ tsp salt
  • 3 ½ cups flour
  • Olive oil to grease bowl

  • Knead dough on a floured surface for 3 – 4 minutes. Form into a ball.
  • Grease a large bowl with olive oil. Roll the dough ball over in bowl to coat. Cover with a cloth or plastic wrap. Chill in the fridge overnight, if making the same day, let rise 1 hour or till doubled in size. Next morning let the dough warm up on the counter for 30 minutes.
  • Gently punch down dough to deflate. On a floured surface shape dough into a loaf that fits into the bread pan. Place in an oil greased pan seam side down. Place oiled plastic wrap or cloth loosely over pan. Let rise 40 – 60 minutes or until it forms a dome over the pan.
  • Preheat oven to 350 degrees F.
