Chicken Katsu with Curry

A super comfort food from Japan! I liked both of these dishes all ready, but combine them and it’s nuts! Two awesome foods come together to form the ultimate dinner.

TONKATSU SAUCE I LOVE YOU

It can take a lot of work to do in one day, but if you have the time, it’s worth it. Or you could make the curry the night before and make sure you have some left to make this!

To make the katsu, panko bread crumbs work best. You don’t need an excessive amount of oil to fry them, since they will be flattened. So it’s not as messy to make as traditional american fried chicken.

You can also pair the katsu with a cabbage salad or just some shredded cabbage.

Chicken Katsu

Servings: 4 servings

Ingredients

  • 2 chicken breasts fat tenderloin and connective tissue trimmed off
  • 1 ½ panko bread crumbs
  • 2 eggs whisked
  • 1 cup flour
  • ½ cup shredded cabbage
  • Salt to taste
  • Pepper to taste Vegetable oil for frying
  • Tonkatsu sauce for serving
  • Cooked white rice

Instructions

  • Cut chicken breasts in half to make 4 skinnier pieces. Like butterflying but go all the way through. Cover in plastic wrap or put in baggie. Flatten pieces with a meat mallet till even and a little under ½ inch thick. Can also use a pan to flatten chicken.
  • Create a dredging station with the flour, eggs, and panko. Also have a plate for the chicken to rest before frying.
  • Coat chicken in flour first, then egg, and finally in panko. Make sure to pat the panko in. Place chicken on a plate.
  • Heat up a ¼ inch of oil in a cast iron or stainless steel pan to about 350 degrees F.
  • Place chicken carefully into oil, don’t crowd the pan. If you need to do it in waves just keep the chicken already cooked warm in an oven.
  • Fry for about 2 ½ minutes each side. You want to cook till golden brown and cooked through.
  • Add cooked chicken to a clean plate lined with paper towel. Salt the chicken.
  • Cut into slices. Serve with cabbage, rice, and tonkatsu sauce.

Tonkatsu Sauce

Ingredients

  • ¼ cup ketchup
  • 2 ½ tbsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1 tsp brown sugar

Instructions

  • Stir all ingredients together.
