A fast pizza dough that can be made into a delicious breakfast or dinner pie. Add this to your breakfast rotation to break up the monotony. Plus it’s pizza for breakfast!
I used tomatoes, red onions, basil, parsley, mozzarella and goat cheese. Topped with 2 eggs and bacon.
Alternate topping ideas are anything that would go in an omelet. Think peppers, mushrooms, ham or spinach. Get creative with the cheeses and make your own mix. Whatever you have in the fridge.
The trick to not over cooking your eggs is to add them after the pizza has already cooked 10 minutes. You can cook the eggs more or less depending on preference, but I wouldn’t go over 10 minutes or the egg can get tough. For example 7-8 minutes would give you a more runny yolk.
No Yeast Pizza Dough
Ingredients
- 1 ½ cups flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp garlic powder
- ¼ cup milk
- ¼ cup water
- 2 tbsp olive oil
- Cornmeal for dusting
- Oil for pan
Instructions
- Preheat the oven to 450 degrees F.
- In a medium bowl, mix together the dry ingredients.
- Add the milk, water, and oil. Combine until shaggy dough forms.
- On a floured surface, knead dough till smooth and flour isn’t visible. Dough should be a little wet.
- Roll out into desired shape. Grease a baking pan with oil and sprinkle it with cornmeal.
- Gently place dough on the pan. Add desired toppings.
- Bake for 18-22 minutes or till the crust is golden.
Breakfast Pizza
Ingredients
- 1 pizza pie’s worth of dough
- ½ cup sliced grape or cherry tomatoes
- 1-1 ½ cups of shredded mozzarella cheese
- 2 tbsp fresh goat cheese crumbled
- 1 ½ tbsp extra virgin olive oil
- 5 strips of cooked bacon
- 2 slices from a red onion separated
- Basil and parsley
- Red pepper flakes
- ⅛ tsp salt
Instructions
- Preheat the oven to 450 degrees F.
- Shape pizza dough and place on an oiled and cornmeal covered pan.
- Brush dough with olive oil.
- Sprinkle cheese evenly, add the amount you like.
- Place onions and tomato slices on pizza. Break apart bacon and place around the pie.
- Season with red pepper flakes, omit if you don’t want spice.
- Bake for 10 minutes and take out to add eggs. Crack 2 or 3 eggs into a bowl, carefully drop eggs onto pizza. Place back into the oven to bake about 10 more minutes. Till eggs are set, but still wobbling. Crust should be golden.
- Garnish with fresh basil and parsley—salt the eggs. Serve!
