At Home Shawarma Chicken Bowl

This shawarma bowl is a mixture of foods from around the Mediterranean. I cherry-picked the foods that I like to add in this dish. Recently a few Mediterranean places have opened up somewhat near me, but still not close enough to be able to get the food home still warm. So to get my fix of food served at Pita Inn, Naf Naf or Roti… I have to make it myself if I want to eat it hot at home.

I would totally trade in the Chipotle or Potbelly’s in my neighborhood for one of those restaurants. There is just so much more flavor!

There is a trick to get that shawarma texture on your chicken at home. I like to bake the chicken—slice it super thin and either fry or bake it again for a few minutes in a mixture of oil and spices.

At Home Shawarma Chicken Bowl

Ingredients

Chicken

  • 2 medium chicken breasts
  • 2 tbsp extra virgin olive oil
  • ½ tsp Salt
  • ½ tsp Pepper
  • ½ tsp Paprika
  • ¼ tsp Cumin
  • ½ tsp Onion powder
  • ½ tsp Garlic powder
  • Dash Cayenne pepper

Tomato Cucumber Salad

  • ½ cup quartered cherry tomatoes
  • ½ cup
  • ¼ of a red onion chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • Salt
  • Pepper

Slaw

  • 1 cup thinly sliced red cabbage
  • 1 tbsp white wine vinegar
  • ½ tsp sugar
  • Salt and pepper to taste

Roasted Vegetables

  • 2 carrots sliced on bias
  • 1 cup cauliflower cut into bite size florets
  • ½ green pepper cut into bite size pieces
  • 1 small onion roughly chopped
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder

Serving

  • Feta or Goat Cheese
  • Serve on rice like white basmati, couscous or lettuce.

Instructions

Chicken

  • Preheat oven to 400.
  • Place chicken on oiled cooking sheet lined with parchment.
  • Season with salt and pepper.
  • Bake 35 minutes or till chicken is done.
  • Thinly sliced up chicken on sheet.
  • Sprinkle with spices and add more oil if needed.
  • Bake 5 to 7 more minutes.

Tomato Cucumber Salad

  • Mix all ingredients together.

Slaw

  • Mix vinegar dressing into cabbage.

Roasted Veggies

  • Place veggies on a parchment lined pan.
  • Mix with oil and spices
  • Bake for 15 minutes at same temp as chicken.

Notes

Serve with plain Greek yogurt and hummus. You can add a hot sauce like red schug which I can’t find anywhere nearby so I use sambal mixed with honey.
