Easy Fattoush Salad

Crispy pita chips and a lemony dressing make this salad. You can eat it alone or with a middle eastern inspired dinner. The chips make it more filling than a regular salad.

You can add more protein to the salad with chickpeas, artichokes, hummus, or some plain Greek yogurt. If you have leftover pitas laying around, you can toast them instead of using store bought pita chips.

Big ol cheese chunks

As I’m not a big fan of Feta, I usually use goat cheese. Feta works just as well if that is what you prefer. This salad can be made ahead, just don’t add the dressing, chips, and cheese till serving. Store them separate to avoid a sad soggy mess.

Easy & Simple Fattoush Salad

Servings: 3 servings

Ingredients

SALAD

  • 1 head of romaine or butter lettuce sliced
  • 1 ½ cup grape tomatoes halved
  • 1 ½ cup cucumbers cut bit sized
  • 1 cup flat leaf parsley loosely packed
  • ¼ of a red onion diced
  • Pita chips sightly crushed
  • Goat cheese or Feta
  • 2-3 Radishes Sliced

DRESSING

  • Juice of ½ a lemon
  • 1-2 tbsp white wine vinegar
  • ¾ cup extra virgin olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic

Instructions

  • Chop all vegetables and toss in a bowl. Break apart goat cheese and add to salad.
  • Add dressing and pita chips and mix before serving.
